These cupcakes don't have the simplest recipe, but they are worth the effort!
(Note: I do not suggest making them mini though, they dry out because they are too small)

Cake Ingredients:
- 1/2 cup shortening
- 1 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup mashed ripe bananas
- 1/4 cup buttermilk (if you don’t have buttermilk on hand use 1/4 cup milk, 1/2 teaspoon lemon juice)
- 2 cups flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
Frosting Ingredients:
- 1/2 cup butter softened
- 2 1/2 cups powder sugar
- 3 tablespoons milk
Directions:
- Cream shortening and sugar.
- Add eggs, vanilla, bananas, & buttermilk.
- Combine flour, baking powder, baking soda, & salt; add to banana mixture.
- Fill lined muffin tin 3/4 full.
- Bake at 350° for 15-20 minutes.
- Allow to cool complete.
Frosting Directions:
- Cream butter and sugar.
- Add milk to achieve desired consistency.
- Frost cakes :)
I add crushed walnuts to the top for garnish!
